There are literally more than a thousand different types of cheeses from around the globe. With regards to what type of cheeses you could substitute here with this recipe it's really all about preference. However, if I were going to change things up a bit I would probably try a nice gruyere cheese or perhaps a nice light version of bleu cheese such as gorgonzola.
I am thrilled to know this recipe was a huge hit for you and your family. If you need any additional recipes specifically let me know and I will do my best to get one up for you as soon as I can. If you have any recipes of your own that you would like to share with us please send them to me at recipes@classycateringcreations.com.
Thank you for the support and the amazing feedback, and have a great day.

It was awesome. Wasn't a thing left. My daughter in law wanted to know what other cheeses you might recommend, to switch things up a bit! 5 star

This is really interesting - I did not know that 'yuba' was the skin on soymilk. I have a most awful fear of skin on milky products ever since Kindergarten, when the evil Tante Schneider made my brother and I eat a custard with the skin on it. We both still tear up at the thought. Crispy yuba, maybe. Soaked, noooo never :)
